Making the Best Food Choices

As we focus on increasing our vegetable intake, we must spend a little more time in the produce isle of the supermarket. One should consider how they will prepare and store these veggies so that they are available for future preparation. I think this is something that is very different when working with meats. For the most part, meats are already packaged and ready to be placed in the freezer until the designated time for use. Vegetables need to be stored properly or else they will spoil. I confess, in my early days of moving over to a vegetable based diet, I have had many instances when I forgot about some veggies that I brought for a particular recipe. It went bad before I got around to using it. Start off slow. There will be a lot of chopping involved!
